Zucchini Chips / Courgette Crisps


I'm forever looking for healthy snack ideas so I've something different to eat than an apple. It keeps things interesting and keeps me motivated to make healthier choices. Something that is super easy and quick is courgette crisps. 


How amazing that these are the only three ingredients that you need. So simple and healthy.  


Cut up the courgette crispy thin and place on baking tray covered in coconut oil and sprinkle with salt.


Cook until they look crispy and it's that simple and they are so delicious with the flavouring of the coconut oil and salt. You could mix is up and use different sauces, seasoning... Have a go yourself and experiment.

Brilliant Banana Bread



As I'm typing this the mixture is in the oven and it smells divine, watering at the mouth here. Anyway, in this post I'm making, you guessed it, banana bread. The YouTube play bar above is the music I was listening to while baking this, 'Bastille - Bad Blood', have a listen too while you read this post if you'd like!

Ingredients

140g butter, softened, plus extra for the tin
140g caster sugar
2 large eggs, beaten
140g self-raising flour
1 tsp baking powder
2 very ripe bananas, mashed

didn't need the milk haha
Method 

Heat oven to 180C/160C fan/gas 4. Butter your loaf tin and line the base and sides with baking parchment.
Cream the butter and sugar until light and fluffy, then slowly add the eggs with a little flour. Fold in the remaining flour, baking powder and mashed bananas. Pour into the tin evenly and bake for about 30 mins.


Guys I'm so proud at how it turned out, the top picture looks so gooood and trust me when I say it tasted even better. Super happy right now, even though it's more of a banana cake than bread!

Healthy Meals | Mushroom, Onion & Goat's Cheese Frittata


I'm typing this while the food cooks in the oven, two birds is always good. Healthy Meals, this may turn into a series if all goes well but first thing on the menu, frittatas. This is my first attempt but they sounded simple enough to make. 



Started by chopping up the mushrooms and onions quite finely.


Next, pan fry them until soft.


Add into baking tray, we used cupcake trays for individual servings, also add the goat's cheese on top.


Then the whisked eggs were added to fill each pod and put into the oven for 15/20 minutes. 


To check there done, poke a tooth pick in the centre and if it comes out dry, all the yolk has cooked through.


And that's them done, I had two for dinner with a bit of salad on the side, scrumdiddlyumptious!

Fresh Food Shop!


As I was feeling a little under the weather for soo long I thought I'd pop to Morrison's and purchase only fresh food to try and help my immune system. I think it really helped so I thought I'd share what I made!


First was a smoothie. I could live off smoothies but their quite expensive to keep up. From my snapchat you can see I blended up blueberries, bananas and strawberries along with natural yoghurt and orange juice. It made three glasses full and was super yummy. 


For breakfast I made an omelette (I swear it's an omelette) with mushrooms, peppers, onions and cheese. The cheese makes it so much tastier but I could easily have it without it to make it more healthier. Moving on from my dreadful omelette presentation... 


I made stuffed red and yellow peppers. For this I just boiled rice and added sweetcorn and mushrooms. Scooped them into the peppers and put them in the oven for a bit topped with cheese. 


For dinner I had sweet potato and spinach curry with garlic naan bread. It's one of my favourite meals now since my vegetarian friend made it for me. Again super easy to make and it could make two to three portions.

I really did feel much better after that healthy weekend and I also drank a lot, a lot of water and peppermint tea so it was worth the staying in and cooking three square meals.

Cooking with Matthew


The other night me and my friend Matt decided to stay in for once and cook our own pizza's. We could live of pizza and we pretty much do so we thought it would be fun to have a go at making our own. It's super simple. We threw the ingredients above together and whacked it in the oven. The smell was amazing and they tasted beaut. We also made some rice krispy buns for afterwards and watched The Hunger Games on Netflix. 
Cute, cosy, cheap wee night in with ma wee chummy!

Halloween Gingerbread House


So I got a gingerbread house kit for my birthday and I attempted to make it today, it's no starry night.




That was fun! :)
